Polyhymnia (Greek: Πολυύμνια; “the one of many hymns”), also spelt Polymnia (Πολύμνια) was in Greek mythology the Muse of sacred poetry, sacred hymn, dance, and eloquence as well as agriculture and pantomime. Her name comes from the Greek words “poly” meaning “many” and “hymnos”, which means “praise”. She is depicted as very serious, pensive and meditative, and often holding a finger to her mouth, dressed in a long cloak and veil and resting her elbow on a pillar. Polyhymnia is also sometimes credited as being the Muse of geometry and meditation.

Day 1: Santorini
Arrival in Santorini.Transfer to the hotel.
Afternoon at leisure.
Early in the evening transfer to Perivolos Beach. Introduction to Santorini Wines. At the restaurant we will have the opportunity to taste “SANTORINIS” from four different wineries. “SANTORINI” is usually a blend of the three basic white grape varieties of Santorini teroir. Asyrtiko, Athiri, Aidani but always based at the most famous variety of Asyrtiko. After wine tasting, sea food dinner.
Day 2: Santorini
Breakfast
Visit to Akrotiri Archaeological site. At Akrotiri we will learn the story of the site and Santorini through the ages but also the effect of the wine to the island from the prehistoric years till today.
We will continue our visit to a traditional cava (a home winery) where we will see how the local people still make wine at home.
Lunch based on traditional products & recipes
On the return back we will visitGavalas Winery where we will have the opportunity to taste red wines from old and rare varieties.
In the afternoon we will visit a wine producer and speak with him. We will meet the wine producer and speak about the wineyards in Santorini and have a vertical wine tasting of 2014, 2015,2016 Asyrtiko tank & barrel.
After the winery, we will visit the village of Oia to admire its famous sunset.
Day 3: Santorini
Breakfast
Later we will drive through the village of Pyrgos in order to reach the highest point of the island near the Monastery of Prophetes Elias. Excellent panoramic view of the island.
On the way back we will visit “HATZIDAKIS” wine producer, probably #1 at Asyrtiko wine making.
Lunch in a local restaurant with local wine.
In the afternoon, visit the agricultural cooperative of Santorini (Agrotikos Syneterismos Santorini), to see the products of Santorini such as cherry tomatos, cheese, capper, fava beans (split peas), etc.
Dinner at the winery with wine tasting at sunset with a glass of sparkling wine (champanoise method), a very “fresh” and interesting effort by Santo Wines.
